Shopify or Shopify Plus, which do I need?

Standard Shopify is plenty for most stores. You move to Plus when you need custom checkout logic, scripts and functions, B2B wholesale, higher API limits, or multi-store, usually at meaningful revenue. I will tell you honestly which tier your situation calls for.

Can you migrate us to Shopify?

Yes. Migrations from Magento, WooCommerce, and legacy platforms are common. The priority is protecting SEO: mapping redirects, preserving URL structure where possible, and moving products and content cleanly.

Can you customize the Shopify checkout?

On Shopify Plus, yes, through checkout extensibility, Scripts, and Functions. On standard Shopify the checkout is more locked down, which is itself a reason some brands upgrade to Plus.
